Background
A parcel of Pinot Noir from a 2007 planting in the Moorabool Valley.
• Farmed on organic principles, hand picked, hand pruned, unirrigated.
• Mixed clay topsoil over a limestone base.
• Natural yeast fermentation with a portion of whole bunch.
• Matured in French oak, of which 10% was new, for 10 months.
• 120 dozen produced.
• Vinified with the help of Matt Holmes at Bannockburn Vineyards.
