Billecart-Salmon is an independent, family-owned Champagne house in Mareuil-sur-Aÿ, founded in 1818 by Nicolas François Billecart and Elisabeth Salmon. Now in its seventh generation under Mathieu Roland-Billecart, it is one of the few remaining family-run houses. Billecart-Salmon is particularly renowned for its rosé Champagne, widely considered one of the benchmarks of the style, though the full range is consistently strong. The house style favours elegance and finesse over power.
