Fermented in stainless steel with naturally occurring yeast to retain all its natural freshness over the 3-4 weeks; after fermentation, the wine is aged on lees for a further 6-8 weeks. The wine is then cold-stabilised and bottled without filtration. The wine is aromatic with pear, crisp green apple and salty air; the palate is fresh, textural, and savoury, all due to the extended lees aging. Crisp and refreshing, it is a fabulous accompaniment to seafood or fresh summer dishes.

Bodegas Castro Martin is located in the Salinas Valley, but more specifically in Rias Baixa, which is located in the northeast pocket of Spain just north of Portugal. Rias Baixa is the birthplace and home of Albarino. The Albarino vines are planted in pure granite sands, well suited to the maritime climate, and heavily influenced by the salty sea air. Castro Martin's history in the area dates back to 1887 and is still owned and run by the same family today. Their philosophy is to make the best wines possible as naturally as possible. They respect the area's traditions while also keeping a keen eye on the broader industry to improve and innovate where possible.
