¬¨‚Ä¢ Farmed on organic principles, hand picked, hand pruned, unirrigated.
¬¨‚Ä¢ Mixed clay topsoil over a limestone base.
¬¨‚Ä¢ Natural yeast fermentation
¬¨‚Ä¢ Matured in a neutral vessel on fermentation lees for 10 months.
¬¨‚Ä¢ Unfined and unfiltered. 90 dozen produced.
¬¨‚Ä¢ Vinified with the help of James Thomas at Heroes Vineyard.
