"Chardonnay, Pinot Gris and Gew≈∏rztraminer were all picked on the same day, destemmed and saw a few hours on skins before being pressed to tank (no pressings cut). This was settled overnight before racking off gross solids, then all varieties were co-fermented (100% wild of course). The wine was bottled at the end of its single fermentation with absolutely no additions, and left to work its magic in glass. The wine is not disgorged."
