"We cultivate 17 ha 50 of vines with the appellation Chablis. Located throughout Chablis, our 40 parcels of Chablis offer a multitude of different caracteristics. The wines of these vines are grown seperately and are later reassembled to create a rich and pure Chablis. After a long pressing and static settling of 24 hours without enzymes, the fermentation was carried ou at a temperature of 20°C thanks to natural yeasts.A malolactic fermentation was followed by a long maturation on fine lees."
